As of May 2013, from out-of-the-box official Viewer installation:

Enable Advanced, Develop, and Admin menus (as-appropriate).
PREFERENCES
- Graphics tab
  - Quality and speed = Ultra. Also see related photo checklist.
  - Click Advanced and enable Depth of Field.
